Hi all. I’ve had two stores where we sold authentic Hawaiian shave ice....retired and now am thinking of shave ice trailer. Problem is, we are in 4 season climate, and have no idea how well we’ll do. Is thee anybody that can share their experience with me? thanks!

12 lb commercial blocks. T hen cut it into 3s. Try to avoid compressed ice and go for solid freezed blocks

Has anyone tried using less sugar in their concentrates? I’ve been using the 5lbs (11 1/14 cups) granulated sugar and I think they are too sweet. I wanna make them a little less sweet without compromising the ice. Any suggestions? Does anyone use 4lbs or 3lbs?

I’d recommend you experiment. Less sugar will cause the syrup to be not as thick. You may just need to adjust your pour to compensate for a runnier syrup.
