Pouring your flavors

Postby LizardLick's » Tue Aug 30, 2011 1:05 am

I hope that everyone is doing well. I am a new to the biz and plan on opening a mobile unit next season. I have already purchased a Little Snowie cube shaver to start out with. I am truly a fan of block shavers but didn't want the addition cost of a ice block maker at this time.

The question that I have is on poring flavors. I am having a hard time getting the flavoring to penetrate the entire sno-cone. My shaver does product courser ice and I have tried different temps on the flavoring.

I have tried room temperature and have tried to refrigerate the flavor as well.

Just wanted to get your input. Thanks in advance!!

Aloha LizardLick's!

Congratulation on your new business, how exciting!

First, are you sure that it isn't penetrating all the way through? Even with the block shaver, it takes a few minutes for the syrup to get to the bottom...usually by the time the person consuming gets near the bottom, it's made its way there.

I would try pouring the syrup, let it sit about 2 minutes, then dump the ice to see if the syrup ever reached the bottom. Let me know how it works out :)
