What's the best syrup?

Hello everyone. I have always loved the shaved ice that I got from Hawaii and was wondering what is the best syrup that I can buy and from where? What does Matsumoto's use?

Having a really good block ice shaver and the right syrup is the key to success. Has anyone heard of Hawaiian Sweet Syrup?

You can purchase syrup from a variety of places. Check the forum for suggestions.

Matsumotos use both Hawaiian Snow and Harders syrup which are located here locally on Oahu. Hawaiian Snow concentrates can be purchased online at www.shaveicesupplies.com. Harders would be a bit difficult since they mainly do wholesale to local business and do not have a shopping site. Keep in mind though that Harders mainly uses extracts for their flavors which means that you would be required to add your own coloring.

There are alot of brands of shave ice flavoring, it really all depends on your preference.

I’ll throw one more out there: the shave ice at the ol' wailua sugar mill up on da north shore is pretty good. They got the best syrups: all their toppings are NATURAL - made with whatever fruits etc they have in season.....no artificial anything. Really tasty, sometimes chunks of fruit in there (mango, pineapple, papaya, coconut etc). the one "syrup" that totally set it off for me was their wailua chocolate topping -- he makes it with the wailua milk chocolate they produce up there, melts it and makes a chocolate sauce that is creamy, sweet, and MONEY. I mixed that with their natural coconut syrup and topped it with some condensed milk (of course) and man oh man was that a unique shave ice treats. I will say I found their ice a bit gritty, so it didn’t all come together to perfection....when he asked me what I thought about it (he's proud of his stuff!) I mentioned that I thought it could improve texturally to be a finer shave, and I mentioned waiola as my personal standard for creamy texture...he agreed and mentioned that he was investing in a new machine.

Yeps, Wailua sugar mill is indeed very good since everything there is homemade. Just to throw it out there, they use our Fujimarca machines! :)

Whatever shaved ice syrup you choose can be turned into a yummy creamy flavor instantly. Pick out your favorite syrup and place seven ounces of the syrup and one ounce of evaporated milk in a container, stir well, and refrigerate. When chilled, pour this creamy mixture over the shaved ice, and you have a snow cone that few people can resist! Syrup flavors that work well with this recipe are banana, strawberry, vanilla, coconut, and cheesecake. You can make a quart with 28 ounces of syrup and four ounces of evaporated milk.

I bought Hawaiian Snow concentrates from shaveicesupplies.com and all the flavors I have tried are wonderful. I will be purchasing more syrups from this site.

I agree completely with you. The chocolate shave ice at Wailua is the best flavor/syrup I have ever had, but the ice was a bit icy.

Waiola is also my standard for best shave ice texture.

Does anyone know what type of machine Waiola uses?
